Paleo Experiments: Spaghetti bolognese with zucchini pasta

So, it seems that my pics I’ve loaded into the Paleo Facebook group I’ve joined have garnered some interest, which I think is rather cool 🙂 I’ve been asked to share my recipes, so today I’m starting with our Spaghetti bolognese with zucchini pasta that we had for dinner on Sunday.

It’s stupidly simple really. I didn’t take a lot of pics of this but I did take one of the zucchini pasta. We made it using a special tool which I bought at the local kitchen supply shop. I couldn’t find the tool I bought in the store but this one does the same thing. Don’t ask me what it’s called though :p

Making the zucchini pasta

It was great fun and the spirals come out really long. You can make skinny ones like spaghetti or fatter flat ones, a bit more like ribbons. Either way they cooked up just like ordinary pasta in boiling water with a little sea salt and were ready in around 8-10 minutes.

The meat mixture is really just a selection of veg and mince, onions, garlic and some herbs and stuff we had in the house. I used salt reduced tomato paste, dried herbs – rosemary, thyme, fennel and fresh parsley and a little sea salt and balsamic vinegar to give the flavour a lift.

Mine had the following, for those who like details:

  • onion
  • garlic
  • carrots
  • dried thyme, rosemary and fennel
  • fresh parsley
  • sea salt
  • balsamic vinegar
  • salt reduced tomato paste

So really, you could just make this like you make your own version of spag bowl any day and substitute the grain pasta for the zucchini. That easy.

Only issue was that we made it before going out to watch some carols at church and then reheated it when we got home. The pasta kept it’s shape but it was a little moist so the texture wasn’t quite as al dente when we first cooked it up. In future, I would cook the pasta fresh and eat it right away.

I hope this inspires you to try your own version. Was it weird eating green pasta that wasn’t pasta? Sure! But a really good kind of weird all the same!
